Baked Christmas ham with apple, celery and walnut salad

Ingredients
- 1 x 4kg ham on or off the bone
- 750ml apple cider
- 100g brown sugar
- 2 teaspoons ground ginger
- 2 tablespoons seeded mustard
- Salad
- 3 apples
- 50ml apple cider vinegar
- 100ml olive oil
- 1 teaspoon seeded mustard
- 1/2 head celery with leaves
- 50g toasted walnuts
Method
- Preheat oven to 160°C
- Carefully peel the skin off the ham, place the ham into a large baking dish and pour over most of the cider, saving a little for the paste
- Bake in the oven for 1 hour, basting often
- Mix together the sugar, ginger and mustard with the remaining cider into a paste
- After 1 hour, remove ham from the oven and increase oven temperature to 200°C
- With a sharp knife score the layer of fat by cutting squares 1cm in size into the fat
- Smear the paste over the ham and return to the oven
- Bake for another 15-20 minutes, until golden brown, cool then slice
- Salad
- Slice the apple, place into a bowl and pour over the vinegar, oil and mustard
- Toss to combine
- Pick the celery leaves and add to the bowl with the sliced celery and the walnuts
- Toss and serve with slices of the baked ham, warm crusty bread and lots of butter
