Barbecued pork cutlets marinated in honey, mustard and apple cider vinegar

Ingredients
- 50g honey
- 75ml apple juice
- 20ml apple cider vinegar
- 25g seeded mustard
- 4 pork cutlets
- Olive oil for cooking
Method
- Mix together the honey, juice, vinegar and mustard until smooth
- Marinate the pork cutlets for 2-3 hours
- Remove the pork from the marinade
- Heat a little oil in a hot pan then seal the cutlets until golden on both sides
- Be careful as the marinade may spit
- Roast in a moderate oven until cooked, occasionally basting with the marinade
- Delicious served with an apple, celery and walnut salad
Notes
Hint Cutlets can also be cooked on the barbeque.
