Ingredients
- 2 cloves garlic
- 1 small Spanish onion
- 750g tomatoes
- 1 small red capsicum
- 1 Lebanese cucumber
- 2 slices crusty white bread
- 75ml olive oil
- 125ml red wine vinegar
- 125ml water
- 2 teaspoons sea salt
Method
- Peel and dice the garlic and onion
- Chop the tomatoes and cucumber
- Soak the bread in the oil and then place all of these ingredients in the bowl of a food processor and blend
- Add the vinegar, water and salt
- Serve well chilled with extra bread for dipping
