Marinated tuna with red onion sauce

- 4 tuna steaks, each about 150g
 - 2 cloves garlic
 - 200ml dry sherry (optional)
 - 4 Spanish onions
 - 75ml olive oil
 - salt and freshly ground black pepper
 - 25ml olive oil
 - ½ lemon, juiced
 
Method
- Place the tuna in a dish and pour over 100ml of the sherry
 - Peel and finely dice the garlic, add to the tuna and allow to marinate for at least an hour before cooking
 - Peel and finely slice the red onions
 - Heat the oil in a large frypan
 - Add the onions, salt and pepper and cook over a low heat for 20-30 minutes until golden and sweet
 - Drain the marinade from the tuna and add it to the onions with the rest of the sherry and simmer for 4-5 minutes until sauce consistency
 - Keep warm
 - Heat the rest of the olive oil in a large frypan and sear the drained tuna for a minute or two on each side until cooked as desired
 - Serve the tuna with the sauce poured over the top
