Salt and pepper prawns with asparagus

Ingredients
- 1 egg white
- 2 clove garlic, finely diced
- 2cm ginger, finely diced
- 16 green prawns, peeled and deveined
- 1 bunch asparagus, cut into 5cm pieces
- 60g cornflour, made from corn
- 1 tablespoon sea salt
- 1 teaspoon ground white pepper
- 1 teaspoon ground black pepper
- 1 teaspoon caster sugar
- 1 small chilli, finely diced (optional)
- vegetable oil for frying
- 1 tablespoon coriander leaves, chopped
Method
- Lightly whisk the egg white in a large bowl and then add the garlic, ginger, prawns and asparagus
- Toss to combine, cover and marinate for at least an hour
- Mix together the cornflour, salt, peppers, sugar and chilli
- Heat the vegetable oil in a deep sided fry pan until hot
- Dip the prawns and asparagus into the spiced flour, deep fry until golden and drain on kitchen paper
- Sprinkle with chopped coriander and serve with steamed rice and soy sauce
