- 1 x 1.5kg chicken
- Sea salt to taste
- 3/4 bunch thyme
- 3/4 bunch oregano
- 1 tablespoon ground white pepper
- 1 tablespoon ground black pepper
- 1 tablespoon paprika
- 1lt butter milk
- 500g plain flour
- 350g bread crumbs
- 80g corn flour
- Vegetable oil for deep frying
- Fresh limes
Method
- Chop chicken into pieces, ensuring each piece has a bone on it
- Season chicken well with sea salt, thyme, oregano, black pepper, white pepper, paprika and butter milk
- Leave overnight
- The following day mix the flour, bread crumbs and corn flour and drain the chicken
- Mix the chicken with the crumb mix in a plastic bag and allow to sit for a few minutes, then deep fry in oil until golden and cooked through
- Season with more sea salt and serve with fresh lime
